SO EASY for employed, full time mother of 3 February 27, 2001 91 out of 91 found this review helpful
My family groaned when I announced we were going to eat healthier. I was a little worried about finding the time to change our lifestyle. This was one of the first books I checked out at the library and I was instantly hooked - had to buy! It is very organised and extremely easy to use. It has a wonderful picture guide that tells you instantly the time, type of ingredients and amount of preparation that is needed. The meals are delicious and fast. We think twice now about buying fast food.

This is an easy to use "bible" on low fat, high nutrient cooking. Geared to people who don't have a lot of time or expertise. I love this book.

Fast and easy! You can make any recipe in this book in less than 30 minutes. Perfect for the first time cook too. You will be happy with the results! Try the first desert recipe. But dont tell the kids it is low in fat!
Excellent resource for reforming one's diet August 17, 2005 Cindy L. Matthews (Central PA) 27 out of 27 found this review helpful
I bought this book because I have been diagnosed with a cardiac problem. I need to lose weight. I also have a few other health issues so being able to put good food on the table quickly is a must for me. This book gives wonderful recipes for doing just that. I've had the book for 2 weeks and I've used it nearly every day. And even the times I haven't used it, I've used the "good food fast" principles as I cook.
As has been mentioned, the recipes don't call for a lot of things I don't already have in my pantry, or for fancy cooking tools I have never owned. It's practical, realistic and tasty. This food does not taste like "healthy" food. It's great.
I would have liked more menu suggestions, but other than that, I'd say, if you want to re-vamp the way you eat without jumping on the South Beach (or other "radical" diet) bandwagon, get this book.
Excellent resource for convenient, healthy cooking June 4, 2006 Erin Lafreniere (Michigan, USA) 19 out of 19 found this review helpful
This book has made it easy for me to plan and cook healthy meals on a regular basis. I have been pleasantly surprised several times by recipes I wasn't sure I would like. I never knew that healthy food could be so flavorful!
Besides having tasty recipes, this book is user-friendly. There are helpful preparation tips, and some recipes have variations or specific suggestions on how to use the leftovers in another dish. The use of "convenient" ingredients such as frozen chopped onion, bottled minced garlic, and canned beans means that many recipes can be put together quickly. I also appreciate the fact that I can choose any recipe and be assured that it's healthy--I don't have to think about it.
On the downside, my regular grocery store doesn't carry a few ingredients, such as red lentils and no-salt-added canned beans. This means that occasionally I have to substitute ingredients (I just buy the lowest-sodium canned beans) or stop at a natural foods store. The book claims that all recipes require 20 minutes or less of preparation time, but that doesn't include cooking time--some recipes take hours to cook. I'm not particularly fast at tasks like chopping vegetables, so even the prep time often takes longer than 20 minutes for me. There are recipes that can be made from start to finish in a relatively short time, but certainly not all of them.
On the whole, though, this cookbook is one of the best that I own. I heartily recommend it!
